Kick-off the Semester on a Sweet Note

President Peterson is handing out cookies and good vibes to start Fall Semester 2025.

If you've been at the West Valley Center or on Taylorsville Redwood, Miller, or Jordan campuses this week, then you may have seen President Greg Peterson handing out some cookies shaped and iced like his Converse Chuck Taylors. If you haven't, but you're able to get to Herriman, South City, or Westpointe campuses tomorrow, Thursday, August 28, then you might still have a chance to kick-off the new semester on a sweet note.

For President Peterson, the actual shoes that inspired those cookies represent accessibility and approachability in leadership, which you can learn more about in SLCC Magazine. For Carson and Abby, the couple behind the decadent confections of The Sugar Coated Sisters, reimagining that signature footwear as sugar cookies was an opportunity to mix up some vibrant icing colors and burn through hundreds of pounds of flour, sugar, and other ingredients.

President Greg Peterson, wearing a blue shirt and tie, smiles while speaking with a student in a grey anime shirt. Both are holding cookies in plastic clamshell containers.

And what are those other ingredients? The couple jealously guard the finer details, unwilling to divulge any crumbs that might lead someone to discover the secret of the recipe.

And the recipe is worth protecting.

Carson describes the cookies as super soft." That's accurate, and the cookies' mild, round, vanilla flavor pairs well with the cream cheese frosting — sweet and a little tangy." The combination is so good that neither one of them sees any reason to make anything besides sugar cookies. We love our one recipe," Carson explains. It's simple. We know it works, and we love to stick by it."

For Greg's shoe cookies, the most difficult part was the icing, which Carson confirms is true of every custom cookie they make. From the color match (it took two tries to get the blue correct) to the detailed work, Carson says that decorating the cookies eats up the most time — a tray of 36 shoe cookies can consume 15 minutes alone, and they produced hundreds for the semester kick-off.

Four students stand holding bags, notebooks, and cookies in plastic clamshells. Next to them is a mirror with vinyl sticker lettering on it that reads: Open Doors to Success.

The work is painstaking, but the details are important to Abby and Carson, who embrace perfectionism in the substance and the style of baking. We take pride that our cookies look really, really good and taste even better," says Carson, explaining that sharp, precise icing and uniform consistency are almost as important as flavor and mouthfeel. It's the best of both worlds: look and taste."

Put them to the test during the final day of our semester kick-off celebration.
