Program Details

Explore the business of Italian cuisine through the lens of Tuscan food systems. This immersive course examines profitability, regulation, labor, and sustainability in Italy’s culinary industry, comparing them with U.S. models. Fieldwork includes market visits, chef collaborations, and economic analysis of food and wine practices.

This program is a provided with the support of IES Abroad. The IES Abroad Siena Center is located in a palace on the famous Piazza del Campo – a large, sunny plaza that acts as the center of social life in Siena. The palace, called Palazzo Chigi Zondadari, was built in the 18th century and served as a home to the prominent Chigi family whose lineage includes many intellectuals, artists, businessmen, and even a pope!

Eligibility

In order to be eligible for this program, all participants must meet the following requirements:

  • Have a minimum GPA of 2.0
  • Be at least 18 years of age
  • Have a valid passport
  • Show proof of ability to travel outside of the United States
  • Complete application packet
  • Provide proof of health insurance

Participants are required to attend all pre-departure orientation sessions/classes as well as all scheduled educational and cultural learning activities. In addition, students must complete all course requirements as assigned by the program leader.

Courses

All students will be enrolled in the following course Spring semester: CHEF 1299: Global Food Enterprise: Culinary Economics and CrossCultural Innovation in Tuscany (3 credit hours) with Professor Cynthia Alberts.

Cancellation/Withdraw

If you need to withdraw from a Study Abroad program you may be refunded depending on how far in advance you are withdrawing. There are costs associated with each trip. Some of these costs are nonrefundable. Advanced payments on each student’s behalf may not be reimbursed if a student withdraws or is unable to participate. Students are responsible for all non-refundable advanced payments. If a student is unable to participate for any reason, SLCC reserves the right to determine the amount of refund, if any.
